Ebleskivers




Beautiful, fluffy danish pancake balls, one morning in March! An ode to Mrs. Thomson, my landlord from university days, who first introduced me to these. I found the pan at a garage sale. The instructions on the recipe say to use a knitting needle to turn the little balls (hee hee). Eat them warm with jam, like we did!

Mrs T's Ebleskivers

2 cups buttermilk
2 cups flour
2 eggs
2 tsp baking powder
1/2 tsp salt
1/2 tsp baking soda
2 Tbsp sugar
4 Tbsp melted butter

Separate egga & beat whites until stiff. Mix all ingredients together until smooth, lastly folding in egg whites. Heat pan to medium heat & put 1 tsp oil in each cup (yah, that's why they're so good, little fried pancake/doughnuts;) Add 2 tsp batter in each cup. Cook 1 min, then turn with a knitting needle to cook the other side. If you have any left, freeze and reheat in the oven (but you probably won't!)
